I have been using Springnote at school and I find that it is very different from most of wiki services. See for yourself http://form.springnote.com

I really like PBWiki; I found http://www.wikispaces.com/ first, so my personal wiki is there; I may move it to PBWiki when my term is over at WikiSpaces.

I've been casually using Google Sites since they rolled it out to the Apps domains; I like it as well, but I find WikiSpaces and PBWiki more compelling.

On the corporate side, both Atlassian Confluence and Jive Clearspace are excellent wiki products. They are expensive, but they are free for 3-5 users if you can provide your own hosting.
